Happy Earth Day! 🌎 Celebrating today with a gigantic Mustard-Maple Quinoa, Chickpea Kale Bowl from Dinnerly 🥗The picture truly doesn’t do it justice, the whole recipe could easily serve 4 people.
This salad was so good that I ended up recreating it! 🥗 I switched up my servings by using slightly different ingredients each time. I added @traderjoes Omega-3 Mix, a scoop of their Mediterranean Hummus, avocado 🥑 , and their Green Goddess Dressing. Long story short, this salad is super versatile!

🥗Ingredients🥗
1oz Maple Syrup
1/2 oz whole grain Dijon Mustard
15oz Can of Chickpeas
Kale
Carrots
Cherry Tomatoes
Quinoa or Brown Rice
Olive Oil
Apple Cider Vinegar
Salt & Pepper
Za’atar
🍽Steps🍽
Cook Quinoa/Brown Rice according to specifications
Scrub carrot and cut into half-moons
Cut Cherry Tomatoes in half
Discard the center stem from Kale and chop remaining
Drain and rinse chickpeas. Marinate with 1tbps of Olive oil, Za’atar (optional), S&P.
Dressing: Combine Maple Syrup, 1/4 cup of olive oil, 2 tablespoons of apple cider vinegar. Season to taste with S&P
Sprinkle @traderjoes Omega-3 Mix or crunchy topping of your choice
Add a scoop of Hummus or avocado
Mix it all up and Enjoy!
